It is through close collaboration that La Folie Douce, Val d'Isère and Xavier Mattys, producer of the Ferme de l'Adroit, have set up a system for recovering the restaurant's kitchen waste to feed the farm's pigs. In addition, this idea provides us with milk and cream every morning, whilst also giving a meaning and a use to all our kitchen waste. This allows us to control our supply chain "from the field to the slaughterhouse". We therefore invite you to meet this producer, Xavier Mattys, who has agreed to follow us in yet another crazy idea.
